San Francisco native Scott Baird, whose name may spark recognition for his creation of Trick Dog, the award-winning cocktail bar in the Mission District, has remixed classic Starlite beverages with beauty, flavor, quirk, and a bit of theater. Take a sip into San Francisco’s history with the Cable Car—Starlite’s version of the Sidecar—or the Porn Star Martini—and embrace the spectacle of an experience with your high-spirited cocktails on the 21st floor.

Menu by Chef Johnny Spero

Created by Michelin-award-winning chef Johnny Spero, the menu of snacks sets the table, complimenting the cocktails and the celebrations of the city’s flavors. The menu includes dishes such as the Hot Fried Chicken Bun inspired by Chef Spero’s exploration of San Francisco’s Chinatown. It’s seasoned with Szechuan spices and pickled daikon and served inside a steam bun. Another love letter to the San Francisco Bay’s affinity for oysters is the Baked Oysters, covered in a sauce made of cider, egg, brown butter, and herbs and topped with bread crumbs.

Multi-hyphenate Nina Tarr brings San Francisco’s nightlife to life with an all-vinyl soundtrack with album listening parties on the regular. Nina takes her vinyl spinning skills to fuse a unique blend of funk, glam, afrobeat, world, boogie, hip hop, new wave, electro, post-punk, kraut, disco, groove, and soul. With a collection of pristine records on deck, the only thing left to do is tap your toes and sing along to your favorites.

A new manifestation of an iconic San Francisco bar will rise up and resume its place in the city’s glittering skyline... serving updated versions of classic cocktails from Trick Dog’s Scott Baird alongside a menu of small plates from Washington, D.C.-based chef Johnny Spero. The bar and lounge, with its legendary views of the city sprawling below, has been designed by Alice Crumeyrolle, previously of Ken Fulk Inc., and will host nightly vinyl DJ sets from music director Nina Tarr.

Revelers showed up in sequins and fur coats, sipping cocktails on green velvet couches overlooking panoramic views of the city... It felt like a jolt of energy being injected into Union Square... "The Starlight Room was a special occasion place, but it was also a place the regulars came,” Baird said. “So we’re trying to foster that environment. You can come here on a Thursday after work and just have a drink, or on a Saturday for a special occasion."
